Luxury Surrey hotel Beaverbrook has brought back its annual hot air balloon dining experience, transforming its Italian Garden into a floral-inspired outdoor restaurant for the summer season.
The attraction, known as Balloons in Bloom, features six stationary hot air balloons installed within the grounds of the estate. This year’s edition has once again been created in partnership with luxury tableware and homeware brand Summerill & Bishop, marking the fourth consecutive collaboration between the two businesses.
The balloons have been decorated using Summerill & Bishop’s Still Life 1815 design, which draws inspiration from British summer gardens. Floral motifs including roses, peonies, irises, daffodils and ranunculus are incorporated throughout the installation, creating a garden-themed setting overlooking the Surrey Hills.
Each balloon basket seats up to four guests and has been styled with the brand’s signature linens and table settings. The experience is available for both lunch and dinner, offering an intimate dining environment within Beaverbrook’s landscaped grounds.
At the centre of the experience is a Japanese-inspired menu showcasing seasonal ingredients. Dishes include Hokkaido scallop tartare, seasonal ceviche, rhubarb and cucumber salad, and a selection of meats and seafood cooked on a yakiniku grill. Among the grill options are Japanese A5 Wagyu sirloin, acorn-fed pork pluma and Spanish octopus. Desserts include a matcha, yuzu and Opalys chocolate creation.
Local produce and suppliers also feature throughout the food and drinks offering. Surrey-based Albury Estate sparkling wine and Silent Pool Gin are included within the beverage programme, while a range of botanical-inspired cocktails takes cues from the surrounding gardens.
Summerill & Bishop said the latest concept was designed to immerse guests in the landscape and celebrate the abundance of the British summer season through flowers, colour and outdoor dining.
The return of Balloons in Bloom forms part of Beaverbrook’s wider summer programme, which highlights the estate’s gardens as they come into bloom. Visitors can also enjoy picnics in the wildflower meadow at The Garden House, adding to the hotel’s seasonal outdoor experiences.
The installation will remain in place throughout the summer, offering guests a distinctive way to dine against the backdrop of the Surrey countryside.
