
Luxury Surrey hotel Beaverbrook has unveiled the return of its annual hot air balloon dining experience for summer 2026, introducing a new floral-inspired concept created in collaboration with luxury homeware brand Summerill & Bishop.
Named Balloons in Bloom, the seasonal installation features six stationary hot air balloons positioned within Beaverbrook’s Italian Garden. Each balloon has been decorated using Summerill & Bishop’s “Still Life 1815” design, transforming the outdoor dining setting into a botanical-themed experience overlooking the Surrey Hills.
The collaboration marks the fourth consecutive year the two brands have worked together on the hotel’s summer balloon concept, following previous themes including Love is in the Air, A Sky Full of Stripes and Fanning The Flame. This year’s design focuses on British summer gardens, incorporating floral patterns inspired by roses, peonies, irises, daffodils and ranunculus in a palette of soft neutrals and bold reds.
Seb Bishop, chief executive and creative director at Summerill & Bishop, said the aim was to create an immersive setting that reflected the surrounding Surrey landscape. He described the concept as “a celebration of seasonal beauty” designed to blur the line between art, nature and dining.
Each balloon seats up to four guests for lunch or dinner and is styled with the company’s signature linens and tableware. The experience centres around Beaverbrook’s Japanese-inspired menu, which showcases seasonal and locally sourced ingredients.
Dishes include Hokkaido scallop tartare, seasonal ceviche, rhubarb and sour cucumber salad, and grilled Japanese A5 Wagyu sirloin. Desserts include a matcha, yuzu and Opalys chocolate creation inspired by origami. Drinks feature sparkling wine from Surrey producer Albury Estate and cocktails made with Silent Pool Gin.
The experience launched on 20 May and will run throughout the summer season, alongside other garden-focused activities across the estate, including picnics in Beaverbrook’s wildflower meadow.
Beaverbrook also confirmed that its balloon dining concept will return to Ascot Racecourse during Royal Ascot from 16 to 20 June, offering trackside dining within the Royal Enclosure.
