Cocktail Recipe: Bees Knees

Crafted with the perfect blend of Silent Pool Gin, zesty lemon, and the rich sweetness of local Albury honey, this superb – and very simple – cocktail pays homage to the tradition of the Bee’s Knees. The Bee’s Knees boasts a fascinating history. It’s believed to have originated at the Ritz in the 1920s with head bartender Frank Meier credited with its creation. It was also associated with American socialite Margaret Brown – famously known as ‘the unsinkable Molly Brown’. It’s a timeless classic and our signature cocktail for Silent Pool Gin.
Ingredients
• 50ml Silent Pool Gin
• 25ml Freshly Squeezed Lemon Juice
• 20ml Honey Water*
Method
1. Place all ingredients in a shaker with ice.
2. Shake vigorously for 8 to 12 seconds
3. Double strain into a coupette glass
4. Garnish with a twist of lemon peel

The Secret to our Bee’s Knees!
Add 1/2 cup of honey and 1/2 cup of water to a small saucepan over medium heat. Stir until the honey is dissolved. Allow to cool and transfer to an airtight container. Honey water will keep, refrigerated, for up to one month.
