The Lakes Distillery, a trailblazer in the world of new world whisky, has announced the launch of Signature, its first permanent style of sherry-led single malt whisky. The launch event took place at the ABar Rooftop at the Mandarin Oriental in Mayfair at the end of March, marking a significant milestone for the distillery.

Signature is the culmination of over a decade of whisky-making expertise and experimentation. Developed by Whiskymaker Sarah Burgess, the whisky reflects The Lakes Distillery’s pioneering approach to whisky production. This includes the use of élevage, a technique more commonly associated with fine wines and cognacs, which involves making intentional adjustments to the whisky during maturation to enhance desired characteristics. This method allows for the creation of a wide array of intriguing flavours by altering factors such as the cask type and location, and combining whisky from different casks.

The result is a whisky that offers a complex and sophisticated flavour profile. Aromas of rich oak, dried fruits, pecan nuts, dark chocolate, and a hint of orange zest fill the nose, while the palate reveals a harmonious blend of baking spices, sultanas, raisins, and figs, followed by notes of stewed orchard fruits, citrus, and treacle, all balanced by the depth of oak.
Presented in a specially designed gift box, the packaging reflects the tranquil waters of the Lake District, contrasting with vibrant colours that symbolise the whisky’s layered and bold flavours.
Founded in 2011, The Lakes Distillery has become a key player in the English whisky movement. Sarah Burgess, who joined the distillery in 2023, brings extensive experience from her time at The Macallan and has been instrumental in creating Signature.

In the summer of 2024, The Lakes Distillery was acquired by Nyetimber, combining two iconic names in English luxury drinks. Eric Heerema, CEO of Nyetimber, praised Signature as a key moment in the rise of English whisky, emphasising the technical elegance and creativity behind its creation.
