MOI Sushi Counter, in partnership with The Listening Room, is set to host its first Tuna Chop Shop Masterclass on Tuesday 27 January in central London. The event will combine a live tuna demonstration with a curated dining experience and a music programme, taking place across MOI’s restaurant space and The Listening Room on the lower ground floor.
The centrepiece of the evening will be the preparation of a whole bluefin tuna weighing approximately 160 kilograms. MOI’s sushi chefs will lead a live breakdown of the fish, explaining the different cuts and their characteristics, as well as how each is traditionally used within Japanese cuisine. Guests will be positioned close to the preparation area, allowing them to observe the process in detail.
During the demonstration, attendees will be offered tastings of the tuna served raw, highlighting variations in texture and flavour across different sections of the fish. Following this, guests will be seated for a multi-course menu designed to showcase the tuna in a range of preparations. The menu will be paired with a selection of drinks from MOI’s bar, including cocktails created for the occasion.
Music will form a key part of the event, with live vinyl DJs performing throughout the evening in The Listening Room. The space, inspired by Japanese listening bars found in areas such as Tokyo and Shinjuku, is designed to provide a focused audio experience in an intimate setting. The organisers describe it as a small, atmospheric venue intended to complement both the food and the music.
MOI Sushi Counter opened on Wardour Street in Soho in mid-summer and has since positioned itself as a Japanese-inspired restaurant specialising in sushi. Its menu includes sashimi, nigiri, onigiri and hand rolls, with a focus on seafood and traditional techniques presented in a contemporary setting. Tuna holds particular cultural significance in Japanese cuisine, often associated with skill, precision and respect for ingredients.
The Tuna Chop Shop Masterclass is intended to offer insight into professional sushi preparation while providing a structured tasting experience. Tickets for the event are priced at £160 per person and are available to purchase online HERE.
