The Great Southern Killarney has unveiled its summer programme, introducing refreshed dining menus, themed drinks experiences and seasonal guest events following its recent upgrade to five-star status.
Located in the centre of Killarney beside Killarney National Park, the historic hotel opened in 1854 as Ireland’s first purpose-built railway hotel. Now part of the Scally Hotel Collection, the property is launching a range of food and drink experiences designed to showcase local produce and the region’s heritage.
At the hotel’s brasserie-style restaurant, Arbour, a new summer menu places an emphasis on ingredients sourced from local producers across County Kerry. Meat is supplied by Cronin’s Butchers in Killarney, while salad leaves and cresses are sourced from Little Black Hill Farm, just outside the town.
The menu features dishes including Cromane oysters with sauce mignonette, monkfish and mussels marinière with cider, chorizo and kale, and dry-aged ribeye served with a choice of chimichurri, peppercorn or nduja butter. Alongside the food offering, the restaurant’s bar has introduced a revised cocktail list featuring Irish whiskey-based drinks such as The Hidden Oak, made with Jameson Black Barrel.

Elsewhere in the hotel, Brownes has launched a new cocktail menu inspired by Kerry’s landscapes and the history of the Browne family, whose links with Killarney date back generations. Signature serves include Full Steam Ahead, Cliffside and Rare and Wild.
Please see the full Brownes cocktail menu here. Mr. Brownes Whiskey Club will take place from 8.30-10pm on 10th July and 14th August. Tickets priced at €40 per person and available to book via evenbrite or the hotel’s events team: events@greatsouthernkillarney.com or 064638000.
Brownes will also host the return of Mr Browne’s Whiskey Club this summer. The guided tasting evenings, led by whiskey expert Mark Lonergan, include a welcome whiskey, a curated tasting and a paired charcuterie board. Events are scheduled for 10 July and 14 August, with tickets priced at €40 per person.
The hotel has also introduced “1854 Champagne Moments”, a weekly Friday gathering held at 6.54pm in the lobby. The event marks both the end of the week and the year the hotel first opened, while also celebrating its new five-star status.
For guests seeking a longer stay, the seasonal “Taste the Wild” package combines a two-night break with a local foraging experience, a four-course dinner at Arbour and daily breakfast. Summer rates at The Great Southern Killarney start from €375 per night.
