Hotel Café Royal’s Green Bar has introduced a new seasonal cocktail menu alongside the launch of its summer terrace, situated just off Regent Street in central London. The terrace will also host a rotating series of collaborations with premium drinks brands throughout the summer.
The Green Bar’s refreshed menu has been curated by Matteo Carretta, Director of Beverages at Hotel Café Royal. It draws inspiration from the venue’s history and the legacy of William J. Tarling, the 1930s head bartender and author of the original Café Royal Cocktail Book. The menu combines classic techniques with modern mixology and showcases independent distilleries and specialist spirit producers.
The drinks are organised into three main sections: Unique Experiences, Seasonal Pairings, and Signature Classics. The Unique Experiences selection highlights rare and distinctive spirits, including creations such as the d’Azur Negroni and the Seventy One Gold Martini, priced between £30 and £55. Seasonal Pairings explore the balance of fresh ingredients with spirits, with cocktails like Gin & Olives and Scotch & Mango, each priced at £25. The Signature Classics section revisits recipes from the original 1937 cocktail book, such as the ‘Crazy Crossing’ and the ‘New Victoria’, also priced at £25. Non-alcoholic options, including Peach & Hibiscus and Mango & Ginger, are available for £18.
The Green Bar Summer Terrace series began in June with a collaboration with Berry Bros. & Rudd to mark Martini Month. July features a partnership with Fielden Rye Whisky, offering a seasonal Mint Julep inspired by the British rye harvest.
These developments follow the recent relaunch of the Café Royal Grill, which now serves lunch and dinner, reinforcing the hotel’s role as a dining destination. The terrace and new menu aim to position the Green Bar as a key spot for cocktails in London this summer.
Hotel Café Royal, located between Mayfair and Soho, combines historic interiors with modern hospitality. Its bars and restaurants continue to reflect the hotel’s legacy in London’s social and culinary history.
Café Royal Cocktail Book: Published in 1937 to mark the coronation of King George VI, a regular guest of the hotel, The Café Royal Cocktail Book was compiled by head bartender W.J. Tarling. A founding member of the UK Bartenders Guild, Tarling selected over 200 classic and original recipes from a pool of 4,000, capturing the spirit of London’s cocktail culture during the interwar years. Originally printed only once, the book was reissued in 2008 and remains a collector’s favourite. Two cocktails from the original edition feature on Café Royal Grill menu.
